When choosing zucchini they should be firm and free of nicks and cuts. (Stay away from soft shriveled zucchini this is a sign that the zucchini is no good.)
Do not wash until ready to use. Rinse Zucchini under cold water and wipe clean with paper towel or clean dishcloth. Make sure it is dry.
The best way to store zucchini is to keep it at room temperate on the counter. If you need to store in a refrigerator, place zucchini in a plastic bag and then place in the crisper drawer for no more than 5 days.
