Selecting

When choosing zucchini they should be firm and free of nicks and cuts. (Stay away from soft shriveled zucchini this is a sign that the zucchini is no good.)

Cleaning

Do not wash until ready to use. Rinse Zucchini under cold water and wipe clean with paper towel or clean dishcloth. Make sure it is dry.

Storing

The best way to store zucchini is to keep it at room temperate on the counter. If you need to store in a refrigerator, place zucchini in a plastic bag and then place in the crisper drawer for no more than 5 days.

Preservation

Summer squashes are best frozen if you can’t eat it all fresh! Freezing Zucchini Bread is also a great way to use up extra squash and makes a great gift or delicious dessert.
