Look for onions that are fresh and glossy in appearance. The tops should be bright green and firm, not limp.
Gently brush any visible dirt off the spring onions. Remove any wilted, slimy or discolored portions of the green onion. Rinse the green onions under cool running water to remove all remaining dirt. Gently peel back the green stems on the onions to make sure that you removed any dirt that is trapped between the stems.
Spring Onions are full of moisture, so they need to be kept refrigerated in a tightly sealed plastic bag. If stored properly they will last a couple of weeks.
