First you want to select corn that is not being stored in direct sunlight. Then you would want to look for corn whose husks are fresh and green and not dried out. To examine the kernels, gently pull back on part of the husk. The kernels should be plump and tightly arranged in rows.
Remove husks and all silk from corn. Cut off the top portion of the cob where the kernels are not filled out. Also, cut any remaining part of the cornstalk off the bottom with a sharp knife. Rinse corn thoroughly in cold water to clean and remove any leftover silk remains.
Leave husks on and store uncovered in refrigerator until ready to eat.
